Why practical education system is required in India rather than a bookish one?

The principal output from a human is action (that does include speaking). Many physical skills can only be learned by doing and practicing.  Can you imagine someone training you to swim within four walls of a classroom? It is simply not possible. You have to get into the water to learn to swim. Some roles require honed actions which become skills (teacher, musician, dancer, engineer, etc.) and some are more cerebral and they may need more symbolic knowledge to be proficient, but neither side can claim the knowledge high ground. Theoretical knowledge of skill-based subjects needs to be supported by practice. So that students can apply it for practical purposes.

Practical work familiarises students with tools and equipment that they will be required to use. Since practical assignments are often carried out in groups it inculcates social values and values like sharing, cooperation, team spirit, compassion, etc.

Students who complete education and start working often find that they are at a loss despite scoring good marks in the examination. If the education system integrates theory with practice, students would be better prepared for jobs. Practical knowledge in advance makes the students perfect and also works as a booster for confidence.
